Pal Kozhukattai / Paal Kolukattai

Pal Kozhukattai (Rice dumpling in sugar syrup) is a sweet from the Chettinad recipe. It's typically prepared on  Ganesh chaturti day. We can also use jaggery instead of sugar. 

 Ingredients:


  • 1 cup – Rice flour
  • 1 cup – Coconut milk
  • 1 cup – Sugar
  • 5 Cups – Water
  • 5 tsp – Grated coconut
  • 4 Cardamom powder
  • 1 tsp Ghee
  • pinch of Salt
  • saffron -A pinch

For Rice dumpling:
  1. Boil 2 cups of water with salt & ghee.
  2. Reduce the flame & add rice flour little by little to the boiling water.
  3. Keep stirring without any lumps till it forms a dough .
  4. Turn off the stove and allow it to cool.
  5. Knead the dough gently .
  6. Grease your palm with little oil & make small balls from the dough.
  7. Steam the rice balls for  5 mins in idly plate .
For Milk:
  1. Take 1/2 of the coconut with 1/2 cup water grind and take 1st extract.
  2. Mix remaining 1/2 of the coconut with 1 1/2 cup of water and take  2nd extract.
Method
  1. In a pan take 2nd extract coconut milk and rice balls together and boil for 10mins in medium flame.
  2. When the balls float on top add 1st extract and sugar & stir it.
  3. Add cardamom powder and switch off the stove.
  4. Transfer this to a  serving bowl & garnish with grated coconut .
  5. Serve Hot or Chill.
