Sambar is one of the most loved dishes in South India. It goes almost with every dish like idli, dosa, rice . Sambar is prepared using many different spices and vegetables. There is many methods of preparation but i make this brahmin style sambar.
Ingredients:
1 lemon sized Tamarind
1 cup Toor Dal
1/2 teaspoon Turmeric Powder
2 teaspoons oil
Salt to taste
5 small dry red chilies
10 Curry Leaves
4 medium onion
1/2 teaspoon mustard seeds
1/4 tsp asafoetida
1 large tomato
2 tablespoons sambar powder ( can buy readymade)
1/4 cup chopped coriander leaves
1 cup Toor Dal
1/2 teaspoon Turmeric Powder

1/4 tsp asafoetida
1 large tomato
2 tablespoons sambar powder ( can buy readymade)
1/4 cup chopped coriander leaves
Method
1. 1.. Cook Toor dal in 2 cups of water till it is soft.
2. 2. Mash the tamarind in 3 cup water and strain. Take a deep pan, heat oil add mustard When they stop crackling add asafoetida, turmeric powder, curry leaves, chopped onions, red chillies fry it till golden brown add tomatoes and cook for 2 minutes.
3. 3. Add tamarind pulp , 1 cup water, sambar powder salt and cook for 5 minutes
4.Mash the cooked dal. Add it to the boiling sambar mixture. If it is thick add some more water. Boil for 5 minutes. Remove from fire after boiling. Add chopped coriander leaves. Now sambar is ready.
1. Note: Various vegetables like drumstick, carrot, radish, tomato etc can also be added to the sambar.
