Vegetable Raita is a refreshing Indian recipe served with the main meals. It goes well with roti also.
Ingredients:
- 1 cup yogurt
- 1 cup finelly chopped cucumber
- 2 Chopped onions
- 1 medium tomato seeded and finelly chopped
- 1/2 teaspoon salt adjust to taste
- 2 Green chilies
- 1/2 tsp Roasted cumin seeds
- Little chopped coriander leaves
Method
1.Beat curd till it becomes smooth. (If the curd is very liquid ,filter the curd in muslin cloth, the excess water will come out and your raitha will be thick)
2.Add chopped onion, tomato and cucumber, chopped green chilies , coriander leaves and mix it well.
3.Sprinkle roasted cumin seeds and salt and again mix well and raitha is ready.
