Kalkandu pongal

Ingredients 

Rice       -    250g
Milk      -    1  Lr
Kalkandu - 200 g
saffron     -  A pinch
Ghee       -   1spoon
Cardomom - A pinch
Cashewnuts -1spoon
Raisins       - 1 spoon





Method

Heat a heavy bottomed pan and heat milk .
Take little milk in a cup and add saffron and keep it aside.
Allow it to boil , add rice and cook in a slow flame until rice becomes soft.
Add kalkandu/diamond sugar and mix it well till it melts well.
Dont cook for a long time after kalkandu melts as it will become hard. This pongal should be in a semi solid consistency .
Heat ghee and roast cashew and raisins and add it to the pongal.
Add saffron and serve hot.
