Kambu is known as pearl millet in English, bajra in Hindi, kambam in Malayalam, sajje in Kannada, and sajjalu in Telugu. India is the largest producer of pearl millet.
Benefits of kambu
Pearl millet is rich in fiber, calcium, iron amino acids, vitamin E, and E. It energizes the body. As it has a good amount of fiber it prevents constipation.

Ingredients
Pearl millet - 2 cups
Idly rice - 1/2 cup
Urad dhal -1/2 cup
fenugreek seeds-1Tsp
Green chilies -2
Salt - As required
Method
Wash and soak pearl millet for 5 to 6 hours. Soak idly rice two hours before grinding and soak urad dhal just half an hour before grinding. Wash the grinder and grind the pearl millet first for 5 minutes. Then add urad dhal and grind for minutes. Lastly, add the rice and fenugreek seeds, and green chilies. If you want you can add onion, garlic, and curry leaves. Sprinkle water as required. When the batter is soft add salt and mix it well and collect it in a container and allow it to ferment overnight.
The next day the batter would have fermented well. If the batter is too thick add a little water. Heat non-stick tawa or a regular iron Tawa and a ladle full of batter and spread it in a circular motion. Add little oil and when it is cooked flip it. Allow it for a minute and collect it on a plate. Serve it with chutney or sambar.
