Avial


Ingredients
Elephant yam-200gm
Carrot  -200gm
Drumstick -1
Raw banana-1
White pumplin-300gm
Yellow pumpkin -300gm
Beans  -100gm
Coconut Oil – 4 Tbsp
Water –  1 cup 
Yogurt – 1 cup
Shredded Coconut – 1 cup
Green Chilies – 4
Cumin Seeds – 1 Tbsp
Salt – to taste
Curry Leaves – 8


Method

Wash and Cut all the vegetables in long stripes.
 Take a thick bottomed vessel , add all the cut vegetables , 1 cup of water and cook for 5 minutes.
Slowly mix the vegetables until it is tender, But the vegetables should not be mushy. It should be crisp. That is the secret of good avial.
Grind coconut, cummin seeds, green chillies and yogurt coarsely.
When vegetables are crispy add the ground mixture in to it and slowly mix well without breaking.
Reduce the flame to low and allow it to come to a slow boil.
Remove this from the stove. Take a small pan , heat  2 tsp coconut oil and add curry leaves and transfer this to the avial.
Sprinkle 2 tsp of coconut oil over this and Avial is ready.
Note:Some people will also add turmeric powder to this. You can take this with rice or roti.  Adai is also a good combination with avial
