Method
- Heat a pan, roast cashews in ghee in medium flame & then keep it aside .
- Add coconut oil and roast the coconut to golden color. Roast coconut in a slow flame and then keep it aside.
- Heat a tsp of coconut oil , when it is hot add mustard seeds, Asafoetida, channa dal, Urad dal, cummin seeds green chillies and curry leaves .Switch off the flame.
- Add the roasted coconut, salt and rice and slowly turn the rice without mashing it.
- Garnish with coriander leaves and cashews.
