Coconut rice


coconut rice
Ingredients 
Rice  -4 cooked cup 
Grated coconut- 1 cup
Cashews --1 tsp 
Green chilly - 2
Coconut oil - 2 tsp
Mustard seeds-1/2 tsp
Channa dal -1 tsp
Urad dal-1 tsp
Asafoetida- A pinch
cuminseeds--1/4 tsp
curry leaves- 8
Salt  -To taste
Coriander leaves for garnishing
Method
  1. Heat a pan, roast  cashews in ghee in medium flame & then keep it aside .
  2. Add coconut oil and  roast the coconut to  golden color. Roast coconut in a slow flame and then keep it aside.
  3. Heat a tsp of coconut oil , when it is hot add mustard seeds, Asafoetida, channa dal, Urad dal, cummin seeds green chillies and curry leaves .Switch off the flame.
  4. Add the roasted coconut, salt and rice and slowly turn the rice without mashing it. 
  5. Garnish with coriander leaves and cashews.
