Malpua
Ingredients
Khoya 1kg
Refined flour -250gm
Corn flour  - 50gm
Cardomom powder  -10gm
Chopped pista   -50gm
Saffron    - 1gm
Water    -1 litre
Fennel seed - 50gm
For sugar syrup
Water  -1litre 
Sugar -2.5kg
Saffron  -1gm
Method
Boil the water,Grate khoya in to it, mix with all the dry ingredients and make a smooth mixture.
Put oil in a pan on medium flame for frying.  Pour some mixture in to the heater oil. The oil should not be very hot.
Flip the malpua , take it out when it becomes little stiff and golden brown in colour. 
Drop this straight in to the sugar syrup.By Chef yogender pal
