Bandakka maluwa

This delicious Sri Lankan curry uses coconut milk generously. This dish is one of the easiest to make and is almost a staple in most Sri Lanakn homes.

Ingredients 
500 gm lady fingers, 200 gm onions (juliened), 100 gm tomatoes (juliened), 30 gms green chillies, 10 gm turmeric powder, 10 gm coriander powder, 5 gm cumin powder, 5 gm cinnamon sticks, 200 ml co conut milk, 5 gm curry leaves, 20 ml coconut oil, 5 gm salt.

Preparation 
Heat oil and fry the lady fingers first. Assemble all the other ingredients together in a pot. Add oil and sauté them together. Add half a cup of water and bring it to boil. Cook on a medium flame for 10 minutes. Serve hot.
