Vegetable upma


Vegetable upma is a good breakfast option and very easy to prepare also. Since so many vegetables are used in it, it is very healthy too. 
Ingredients
rava- 1 cups
onion- 1 chopped finely
tomato- 1 chopped finely
green chillies-2 slitted
ginger- 1 small piece chopped finely
carrot-1 chopped finely
beans- 6-8 chopped finely
peas- 1/2 cup
turmeric powder- 1/4 tsp or less
coriander leaves- a few chopped finely
water - 2cups
salt to taste
Ghee - 1 tsp
Seasonings
oil- 2 to 3 tbsp
mustard seeds- 1/4 tsp
split urad dal- 1/4 tsp
channa dal- 1/2 tsp
asafoetida- little
curry leaves- a few
Method
Take a pan and dry roast the rava in slow flame for two minutes. Transfer rava to a plate. Heat oil add mustard seeds,channa dal, urad dal, curry leaves and asafoetida . Now add onion, chillies , ginger fry for a minute. Add tomatoes , carrot , beans , peas , turmeric powder , salt and fry till the vegetables are cooked. Pour water and allow it to boil. Simmer the stove and  add roasted rava carefully , mix it well and close the pan for a minute. When it is done transfer it to a bowl and add chopped coriander leaves. You can also add 1 spoon of ghee  for taste.  serve hot with coconut or tomato chutney.
