Kothu, or Kothu Roti  is a Sri Lankan cuisine, made with roti and vegetables. Kothu roti means chopped roti in Tamil. Most of us would have seen kothu parotta being done in hotels. Kothu parotta is a famous dish in the south Indian village restaurants or roadside restaurents.  But we can use the normal tawa at home. If there are some leftover rotis  we can prepare this dish.
Ingredients 
Carrots-1
chapatis -4 vertically sliced
Onion-2
capsicum -1
green chillies-2
garlic-3cloves (chopped)
ginger-1 Inch (chopped),
red chilli-2 (crushed)

salt
black pepper-1/2 Tsp
coconut oil-2tsp
coriander leaves
Preparation
Cut all the vegetables in thin strips. Cut the roti into vertical strings. Sauté onion, ginger, garlic, carrots and capsicum. When it is cooked well  add the roti add salt, red chilli, black pepper. Mix well, garnish with coriander leaves and serve.
